The Story Behind the Schmear

Dish’s Bagels was inspired early in Chad Dishner’s life, shaped by generations of family rooted in New York’s legendary Catskills, a place known for incredible food, unforgettable experiences, and world-class hospitality.


In the 1950s, his grandparents built Dishner’s Bungalow Colony, where guests were not just visitors, they were family. From barbecues and lawn parties to weekend getaways, everything centered around great food, genuine hospitality, and a strong sense of community.


On the other side of the family, his maternal grandparents ran a coffee shop inside the iconic Brown’s Hotel Resort. They served up freshly brewed coffee, classic New York breakfast and lunch favorites, and house-made pastries, all delivered with warmth, energy, and that unmistakable Catskills charm.


That legacy sparked a passion that lives on today.

Dish’s Bagels brings it all together, authentic New York bagels, stacked deli sandwiches, and a welcoming, high-energy atmosphere where great food and great people come together. It is more than a bagel shop, it is a true taste of New York, built on family, tradition, and hospitality.
